BACON AVOCADO CHICKEN SALAD WITH LEMON VINAIGRETTE
INGREDIENTS
Salad:
2 chicken breasts, cooked and chopped
2 chopped avocados
1 cup corn kernels 1 corncob
6 slices of bacon, cooked crispy and chopped
4 cups chopped lettuce
2 rum tomatoes with seeds and cubes
2 tablespoons fresh chopped parsley
2 tablespoons fresh chopped chives
Vinaigrette Lemon Sauce:
1 lemon juice
1 lime juice
¼ cup olive oil
2 cloves of minced garlic
1 tablespoon of honey
salt and pepper to taste
INSTRUCTIONS
Vinaigrette with lemon
- Beat the ingredients in a small bowl or put the ingredients in a mason jar, close tightly and shake well.
- Add salt and pepper to taste.
Salad:
- Combine the salad ingredients in a large bowl. Pieces should be as uniform as possible.
- Stir with half the salad. Add more refills as desired.
- Enjoy immediately.
