EASY CHICKEN STIR FRY RECIPE
Ingredients
1 pound boneless skinless chicken breast cut into 1-inch cubes
salt and pepper to taste
2 tablespoons of olive oil split
2 cups broccoli
1/2 yellow pepper chopped into 1 inch slices
1/2 red pepper chopped into 1-inch slices
1/2 cup chopped carrots
2 teaspoons chopped ginger
2 cloves of garlic
Fried sauce
1 tablespoon of corn starch
2 tablespoons of cold water
1/4 cup low sodium chicken stock
3 tablespoons low sodium soy sauce
1/4 cup honey
1 tablespoon fried sesame oil
1/2 tsp shredded red pepper flakes
Instructions
Fried sauce
- In a medium-sized bowl, combine corn starch and water. Add the remaining ingredients (chicken stock, soy sauce, honey and fried sesame oil, red pepper flakes) and beat. Set aside.
- Add one tablespoon of olive oil to a large frying pan or wok and heat over medium heat.
- Add chicken (in portions if necessary) and season with salt and pepper. Cook for 3 to 5 minutes or until cooked. Remove from the pan.
- Reduce heat to medium and add the remaining tablespoon of oil to the pan.
- Add broccoli, bell pepper and carrots and cook, stirring occasionally, only until crisp. Add ginger and garlic and cook for another minute.
- Add the chicken back to the pan and mix.
- Beat, fry the sauce, fry the chicken and vegetables and mix gently.
- Bring to a boil, stirring occasionally, and let simmer for one minute.
- Serve with rice and / or meow as desired.
