TACO CASSEROLE – LOW CARB / KETO
INGREDIENTS
1 1/2 pound ground beef
1 14.5 ounces can chop tomatoes
1 4 ounces can dice green chili peppers
2 cups cooked rice cabbage
3 tbs seasoning tbs
1 8 oz. Cheese tacos per bag
INSTRUCTIONS
- Make cauliflower rice (in bags or fresh) and dry to remove excess moisture.
- Cook the beef on the stove until brown
- Add tomatoes, cauliflower, seasoning with tacos and chili, mix until fully mixed
- In a 13 x 9 baking dish, a layer of beef mixture is enough to cover the bottom - about half
- Top with 2/3 cheese and spread evenly
- Repeat with the rest of the beef and then on top with the rest of the cheese
- Bake for 15-20 minutes at 350 degrees until the cheese melts
- Serve in a bowl alone or with sour cream and avocado
