EASY CHICKEN FRIED RICE

Ingredients

1 tablespoon of oil
2 large chicken breasts (sliced; slices dry for best results)
2 large onions (peeled and diced)
3 medium carrots (peeled, chopped and diced)
1 red pepper (diced)
2 cups cooked and chilled rice
3 tablespoons low sodium soy sauce
1 tablespoon maple syrup
2 large eggs (whipped)
1/2 cup frozen peas
Sesame seeds and chopped green onions (serve (optional))

Instructions

  1. Fry the chicken: heat the oil in a large frying pan over medium heat. Cook the chicken from all sides until it is browned.
  2. Fry vegetables: add onions and carrots and cook until onions become transparent, about 3 minutes. Add pepper and cook until soft.
  3. Cook the rice: add the rice and cook until it turns brown. Add soy sauce and maple syrup.
  4. Cook the egg: push the fried rice toward the pan to make room in the middle. Add beaten eggs and cook over medium heat until cooked. Cut into pieces with a spatula and add rice.
  5. Finish the dish: add the peas, mix well and cook until they become hot.
  6. Serve: Serve immediately, sprinkled with sesame seeds and chopped green onions, if you like.
