Spanish Food Recipes; Homemade Cheese Puffs with Sesame Seeds and Honey

Cheese pies. Until recently, having heard this, one could recall the memories of children's trips to the beach, always complete with a Cheetos bag (among healthier snacks such as fresh fruits and tuna sandwiches). But I recently discovered that real cheese puffs - homemade cheese puffs - not only exist, but they are easy to make and they are also delicious.

I found this Spanish cheese recipe in one of my favorite Spanish cookbooks, Delicioso! Regional Culinary of Spain Penelope Casas. Almost 20 years (first published in 1996). I like Casas's interpretation of Spain and the Spanish cuisine of the time. I had never come across a Spanish cheese recipe before, but after reading the ingredients, I made sure that Penelope knew what she was talking about.

The winning combination of tetilla cream cheese, fried sesame seeds and sweet honey makes these snacks irresistible. This is an ideal tapa that can be prepared in advance and fried at the last minute, I recommend preparing an extra one, because they quickly disappear!

Ingredients

2 tbsp sesame seeds toast
Extra Sesame Seeds for Coating
½ cup + 2 tablespoons flour
½ teaspoon baking powder
Sweet teaspoon sweet spanish paprika
2 eggs, separate
3 ounces cream cheese cow's milk (e.g. tetilla, if you can get it), grated
¼ grated dried manchego cheese (sub parmesan if necessary)
Olive oil for frying
Honey for coating

Instructions

  1. First, preheat the oven to 350 ° F and place 2 tons of sesame seeds on a baking sheet covered with foil. Lightly fry sesame seeds until golden brown and fragrant (about 5-7 minutes).
  2. In a medium bowl, combine flour, baking powder, paprika and salt.
  3. In a separate bowl, beat the egg whites until hard peaks form (do not let them dry).
  4. Add cheese, egg yolks, fried sesame seeds and a mixture of flour.
  5. Put the dough in a spoon on a baking sheet with foil and refrigerate for at least 30 minutes.
  6. Heat the oil until very hot (but do not smoke). Check the temperature with a small piece of bread, if you have one. It should brown quickly (but not burn).
  7. Roll each layer of cheese in raw sesame seeds and fry until golden brown (about 1-2 minutes).
  8. The remaining paper towels absorb excess oil for about one minute. Then put on a dish and drizzle honey on top until it is soaked.
  9. Serve immediately.
