Vegan One Pot Pasta

INGREDIENTS

1 box of chickpea pasta (8 ounces gluten free) *
1/2 tablespoon olive oil
1/2 red onion cut into thin slices
Chop 4 cloves of garlic
1 bell pepper I used half orange, half yellow
2 cup green beans
1/3 cup dried tomatoes, chopped roughly
herbs (fresh thyme, basil, Italian parsley or green onions) for decoration
sea ​​salt and black pepper to taste

Creamy Tomato Paste Sauce

1/3 cup cashews soak for 2 hours and rinse
1 15 ounces can dice tomatoes
3/4 teaspoon of sea salt or more to taste
1 teaspoon of caraway seeds
1 teaspoon paprika
1 teaspoon fresh thyme (or 1/4 teaspoon dried thyme)
black pepper to taste
2 cups of water are not added to the sauce

INSTRUCTIONS

  1. Soak cashews in cold water for at least 2 hours or overnight. If you do not have time for this step, soak cashews in boiling water for 20 minutes.
  2. Add soaked and dried cashews and diced tomatoes in a blender with all the seasonings for the sauce. Mix until smooth, about 1-2 minutes in a high speed blender or a little longer in a standard blender. Set aside.
  3. Add olive oil, onion and garlic to the pan. Fry over medium heat until the onions and garlic turn brown.
  4. Add chopped peppers and green beans and fry until cooked to taste. Remove all vegetables from the pan and set aside.
  5. In the same pan (in fact, you don’t even need to wash it!), Bring 2 cups of water to a boil, and then add the chickpea paste and creamy tomato sauce. Allow to simmer for 5-7 minutes until the pasta is left, but the sauce begins to thicken. The sauce will appear large, but will also cover the vegetables.
  6. Add vegetables and sun-dried tomatoes and mix. Garnish with fresh thyme, parsley or basil.
  7. This pasta is just as tasty the next day. Leftovers are kept very well.

NOTES

* A box of chickpea pasta is 8 ounces.

To do this with another gluten free pasta (I tested with pasta made from rice and quinoa):
  1. Use 1/2 cup of water or dilute the sauce as a paste to taste.
  2. Cook the pasta with water and creamy tomato sauce closer to 12-15 minutes. Chickpea paste is prepared much faster than grain-based pasta.
